Thanksgiving Sides We Love

Thanksgiving is a time for family, gratitude, and, of course, incredible food! While the turkey might be the star of the show, the side dishes are what make Thanksgiving dinner memorable. Here are three simple yet delicious sides that are easy to prepare and will wow your guests.

1. Honey-Glazed Roasted Carrots

These honey-glazed carrots are a perfect mix of sweet and savory, and they add a beautiful pop of color to your table!

Ingredients:
  • 1 lb carrots, peeled and cut into sticks or rounds
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper to taste
Method:
  1. Preheat your oven to 400°F.
  2. In a mixing bowl, combine olive oil, honey, thyme, salt, and pepper. Toss carrots in the mixture until well-coated.
  3. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 25-30 minutes, stirring halfway through, until the carrots are tender and caramelized.
  5. Serve warm, garnished with a sprinkle of extra thyme if desired.

Tip: For a smoky flavor, try adding a dash of smoked paprika to the glaze!

2. Garlic & Herb Mashed Potatoes

Classic mashed potatoes get a flavorful twist with garlic and fresh herbs. This side dish is creamy, rich, and an absolute must on Thanksgiving.

Ingredients:
  • 2 lbs Yukon Gold potatoes, peeled and cut into chunks
  • 4 cloves garlic, peeled
  • 4 tbsp butter
  • ½ cup heavy cream (or milk for a lighter option)
  • 2 tbsp fresh chives, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
Method:
  1. In a large pot, bring potatoes and garlic to a boil in salted water. Reduce to a simmer and cook until potatoes are tender, about 15-20 minutes.
  2. Drain the potatoes and garlic, then return them to the pot. Add butter and mash until smooth.
  3. Stir in the heavy cream until you reach your desired consistency.
  4. Mix in the chives, parsley, salt, and pepper.
  5. Serve hot, with an extra sprinkle of herbs for garnish.

Tip: For an even richer flavor, substitute half of the butter with cream cheese.

3. Green Bean Almondine

This green bean almondine is a fresh, light side that pairs wonderfully with heavier Thanksgiving dishes. Toasted almonds and a splash of lemon add a little crunch and brightness.

Ingredients:
  • 1 lb fresh green beans, trimmed
  • 2 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • ¼ cup slivered almonds
  • 1 tbsp lemon juice
  • Salt and pepper to taste
Method:
  1. Bring a pot of water to a boil. Blanch the green beans for 3-4 minutes, then transfer to an ice bath to keep their vibrant green color.
  2. In a skillet over medium heat, toast the almonds until golden brown, about 2-3 minutes. Set aside.
  3. In the same skillet, add olive oil or butter and sauté the garlic until fragrant, about 1 minute.
  4. Add the green beans, salt, and pepper, and cook for 2-3 minutes until heated through.
  5. Remove from heat, add lemon juice, and toss with toasted almonds before serving.

Tip: Add a sprinkle of Parmesan cheese for an extra savory touch.
