Ingredients:
- 2 Lean New York Strip Steaks (Passanante Product #:111124)
- 1 tbsp. Olive Oil
- 1 tbsp. Butter
- 1lb. Yukon Gold Potatoes, sliced about ½ inch thick
- 3 Garlic cloves, minced
- 1 tsp. Thyme, chopped
- 1 tsp. Rosemary, chopped
- 1 tsp. Oregano, chopped
- Salt and Pepper
Garlic Butter Compound:
- ¼ cup Butter, softened
- 3 Garlic cloves, minced
- 1 tsp. Thyme, chopped
- 1 tsp. Rosemary, chopped
- 1 tsp. Oregano, chopped
Method:
- In a large cast iron skillet over medium-high heat, heat olive oil and butter, then add potatoes, garlic, thyme, rosemary and oregano. Cook for about 3 minutes, flip the potatoes and cook for an additional 3 minutes or until fork tender. Remove and set aside.
- Turn the skillet to high heat. Add the steaks and sear on each side for about 3 minutes until outside has a crispy, golden-brown crust. Reduce heat to medium-high and continue to cook to desired doneness.
- Just before the steaks are done, mix the remaining butter, garlic, and fresh chopped herbs, and slather on top of steaks.
- Add the potatoes back to the skillet and heat through while the butter melts into the steaks.
- Serve immediately and enjoy!
